These delicious flagels, a hybrid of a flat bagel and a traditional bagel, are made with the unexpected addition of cottage cheese for a tender crumb and rich flavor. Perfect for breakfast or a hearty snack.

  • 2 cups All-purpose flour
  • 1 tsp Active dry yeast
  • 1 tbsp Granulated sugar
  • 1 tsp Salt
  • 1 cup Warm water
  • 1 cup Cottage cheese drained
  • 1 Egg for egg wash
  • 1 tbsp Sesame seeds for topping

Method
 

Making the Flagels
  1. Combine warm water, sugar, and yeast in a bowl; let it proof for 5 minutes until foamy.
  2. In a large bowl, mix flour, salt, and drained cottage cheese; add the proofed yeast mixture and knead until a smooth dough forms.
  3. Divide the dough into 8 equal pieces, shape each into a flat bagel (flagel) form, and let them rest for 15 minutes.
  4. Brush the flagels with egg wash, sprinkle with sesame seeds, and bake at 400°F (200°C) for 18-22 minutes until golden brown.

Notes

For best results, ensure your oven is preheated properly. Flagels are best enjoyed fresh, but can be frozen and reheated in a toaster.
