Cooking Instructions
- In a medium saucepan, bring chicken broth to a boil.
- Add orzo pasta and cook according to package directions, usually 8-10 minutes, until al dente.
- Drain any excess broth if necessary, leaving a small amount to keep the orzo moist.
- Stir in shredded cooked chicken, halved cherry tomatoes, crumbled feta cheese, sliced Kalamata olives, fresh spinach, garlic powder, dried oregano, salt, and black pepper.
- Cook for another 2-3 minutes, or until the spinach has wilted and all ingredients are heated through.
Notes
For extra flavor, add a squeeze of fresh lemon juice before serving. You can also garnish with fresh parsley or dill if desired.
