  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup feta cheese crumbled
  • 0.25 cup Kalamata olives sliced
  • 2 cups fresh spinach
Seasoning
  • 0.5 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.25 tsp salt
  • 0.125 tsp black pepper

Method
 

Cooking Instructions
  1. In a medium saucepan, bring chicken broth to a boil.
  2. Add orzo pasta and cook according to package directions, usually 8-10 minutes, until al dente.
  3. Drain any excess broth if necessary, leaving a small amount to keep the orzo moist.
  4. Stir in shredded cooked chicken, halved cherry tomatoes, crumbled feta cheese, sliced Kalamata olives, fresh spinach, garlic powder, dried oregano, salt, and black pepper.
  5. Cook for another 2-3 minutes, or until the spinach has wilted and all ingredients are heated through.

Notes

For extra flavor, add a squeeze of fresh lemon juice before serving. You can also garnish with fresh parsley or dill if desired.
