This one-pot coconut chicken dish is incredibly quick to make and bursting with flavor. Perfect for a weeknight meal when you're short on time but still want something delicious and satisfying.

  • 500 g boneless, skinless chicken thighs
  • 400 ml coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 bell pepper sliced
  • 150 g spinach
  • fresh cilantro chopped for garnish

Cooking Steps
  1. Slice the chicken thighs into bite-sized pieces and set aside.
  2. In a large pot or deep skillet, whisk together the coconut milk, red curry paste, fish sauce, and lime juice.
  3. Add the sliced chicken and bell pepper to the pot, then bring the mixture to a simmer over medium heat.
  4. Cook for 7-10 minutes, or until the chicken is cooked through and tender.
  5. Stir in the fresh spinach and cook for another 1-2 minutes until it wilts.
  6. Remove from heat, garnish with fresh cilantro, and serve immediately with rice or noodles.

Notes

For extra heat, add a pinch of chili flakes. You can also substitute chicken breast for thighs, adjusting cook time as needed. Serve with jasmine rice or rice noodles for a complete meal.
