Ingredients
  

For the Shrimp and Marinade
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
For the Wraps
  • 5 flour tortillas (8-inch)
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup diced avocado
  • 0.5 cup red onion, thinly sliced
  • 0.25 cup fresh cilantro, chopped
  • lime wedges for serving
Optional Sauce
  • 0.5 cup Greek yogurt or sour cream
  • 1 tsp sriracha or hot sauce or to taste
  • 1 tbsp lime juice

Method
 

Marinate the Shrimp
  1. In a bowl, combine shrimp with lemon juice, olive oil, minced garlic, chili powder, cumin, salt, and pepper. Toss to coat the shrimp evenly and let it marinate for 10-15 minutes.
Grill the Shrimp
  1. Preheat your grill or grill pan to medium-high heat. Thread the marinated shrimp onto skewers if using, or place them directly on the grill. Grill for 2-3 minutes per side, until pink and cooked through.
Warm the Tortillas
  1. While the shrimp is grilling, warm the flour tortillas according to package instructions, typically in a microwave for a few seconds or on a dry skillet for 15-30 seconds per side.
Assemble the Wraps
  1. Lay out each warm tortilla and fill with shredded lettuce, diced tomatoes, diced avocado, thinly sliced red onion, and fresh cilantro. Add an equal portion of grilled shrimp to each tortilla.
Serve
  1. If desired, mix Greek yogurt or sour cream with sriracha and lime juice for a quick sauce. Drizzle the sauce over the filling and serve immediately with lime wedges.

Notes

For extra convenience, you can prep the vegetables ahead of time. Adjust the spice level of the marinade and optional sauce to your liking. Serve with a side of fruit salad for a complete meal.
