  • 2 cups Cooked Chicken Breast shredded
  • 4 cups Napa Cabbage shredded
  • 1 cup Carrots julienned
  • 1/2 cup Red Bell Pepper thinly sliced
  • 1/2 cup Green Onions sliced
  • 1/4 cup Cilantro chopped
  • 1 can Mandarin Oranges
For the Dressing
  • 1/4 cup Rice Vinegar
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 tablespoon Honey
  • 1 teaspoon Ginger grated
  • 1 clove Garlic minced
For Garnish (Optional)
  • 1 tablespoon Sesame Seeds
  • 1/2 cup Crispy Wonton Strips

Method
 

Prepare the Salad
  1. In a large bowl, combine the shredded chicken breast, shredded napa cabbage, julienned carrots, sliced red bell pepper, sliced green onions, chopped cilantro, and drained mandarin oranges.
  2. Toss all the ingredients gently to combine.
Make the Dressing
  1. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, grated ginger, and minced garlic.
  2. Taste and adjust the seasoning as needed, adding more honey for sweetness or soy sauce for saltiness.
