  • 2 bell peppers sliced

  • 1 tsp cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation
  1. Slice the beef skirt steak against the grain into thin strips.
  2. In a bowl, whisk together olive oil, chili powder, cumin, garlic powder, salt, and black pepper to create the marinade.
  3. Add the sliced beef to the marinade, ensuring it's fully coated, then let it marinate for at least 15 minutes.
Cooking
  1. Heat a large skillet or cast-iron pan over medium-high heat.
  2. Add the marinated beef to the hot skillet and cook for 3-5 minutes, or until browned, then remove the beef and set aside.
  3. In the same skillet, add the sliced bell peppers and onion, cooking until they are tender-crisp, about 5-7 minutes.
  4. Return the cooked beef to the skillet with the vegetables and toss to combine.
  5. Squeeze fresh lime juice over the mixture and stir well.
Serving
  1. Warm the tortillas according to package directions.

Notes
