Preparation
- Slice the beef skirt steak against the grain into thin strips.
- In a bowl, whisk together olive oil, chili powder, cumin, garlic powder, salt, and black pepper to create the marinade.
- Add the sliced beef to the marinade, ensuring it's fully coated, then let it marinate for at least 15 minutes.
Cooking
- Heat a large skillet or cast-iron pan over medium-high heat.
- Add the marinated beef to the hot skillet and cook for 3-5 minutes, or until browned, then remove the beef and set aside.
- In the same skillet, add the sliced bell peppers and onion, cooking until they are tender-crisp, about 5-7 minutes.
- Return the cooked beef to the skillet with the vegetables and toss to combine.
- Squeeze fresh lime juice over the mixture and stir well.
Serving
- Warm the tortillas according to package directions.
- Serve the beef and vegetable mixture in warm tortillas with your favorite fajita toppings.
Notes
