  • 4 oz rice vermicelli
  • 2 large carrots
  • 1 English cucumber
  • 1 red bell pepper
  • 4 scallions
  • 0.5 cup fresh mint leaves
  • 0.5 cup fresh cilantro leaves
  • 8 oz cooked shrimp or tofu
Spicy Ginger Dressing
  • 0.25 cup rice vinegar
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp fresh ginger, grated
  • 1 clove garlic, minced
  • 1-2 tsp Sriracha or chili garlic sauce to taste
  • 1 tsp honey or maple syrup optional

Method
 

Preparation
  1. Cook rice vermicelli according to package directions, then rinse with cold water and drain well.

  3. Chop mint and cilantro leaves, and set aside with the other prepared vegetables.
  4. Combine all dressing ingredients in a small bowl and whisk until well mixed.
Assembly
  1. In a large bowl, combine the cooked vermicelli, julienned vegetables, fresh herbs, and shrimp or tofu.
  2. Pour the spicy ginger dressing over the salad mixture and toss gently to ensure everything is evenly coated.
