Preparation
  1. Preheat your grill to medium-high heat.
  2. Lightly brush the cut sides of the peaches with olive oil if desired for grilling. Ensure the grill grates are clean and oiled to prevent sticking.
Grilling
  1. Place the peach halves cut-side down on the preheated grill.
  2. Grill for 3-5 minutes per side, or until grill marks appear and the peaches are slightly softened.
Assembly
  1. Remove the grilled peaches from the grill and let them cool for a few minutes.
  2. Once cooled, slice each peach half into wedges.
  3. Arrange the peach wedges on a serving platter or individual plates.
  4. Sprinkle the chopped fresh mint and crumbled feta cheese over the peaches. Drizzle with balsamic glaze if using, and serve immediately.

Notes
