Sweet Potato Layers
  • 3-4 medium sweet potatoes
  • 2 tbsp butter
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

  • 1/2 cup pecans
  • 1 cup marshmallows

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Peel the sweet potatoes and slice them into thin, uniform rounds, about 1/8 inch thick.
Layering and Baking
  1. In a bowl, melt the butter and stir in the brown sugar, cinnamon, nutmeg, and salt.
  2. Arrange a single layer of sweet potato slices in the prepared baking dish, overlapping them slightly.
  3. Brush a quarter of the butter mixture over the sweet potato layer.
  4. Repeat layering sweet potatoes and brushing with the butter mixture until all sweet potatoes are used, ending with a layer of butter mixture.
  5. Cover the baking dish with foil and bake for 45 minutes.
  6. Remove the foil and, if desired, sprinkle with pecans and marshmallows, then bake for another 15-20 minutes, or until the sweet potatoes are tender and the topping is golden brown.
Serving
  1. Let the layered sweet potato cool slightly before serving.

Notes

For extra flavor, you can add a hint of orange zest to the butter mixture. Adjust the sweetness to your preference by adding more or less brown sugar.
