Preparation
  1. Slice the chicken breasts into thin strips or small cubes.
  2. In a bowl, combine sweet chili sauce, soy sauce, and lime juice.
Cooking
  1. Heat a large skillet or frying pan over medium-high heat.
  2. Add the chicken to the hot skillet and cook until browned and cooked through, about 5-7 minutes.
  3. Pour the sweet chili sauce mixture over the cooked chicken, stirring to coat evenly; cook for another 2-3 minutes, allowing the sauce to thicken slightly.
Assembly
  1. Warm the tortillas according to package instructions.
  2. Divide the cooked chicken mixture among the warmed tortillas, then top each with shredded lettuce and carrots.
  3. Roll up the tortillas tightly and serve immediately.

Notes

For an extra kick, add a pinch of red pepper flakes to the sauce. These wraps are also great with diced bell peppers or cucumber.
