Instructions
  1. Dice the eggplant and tomatoes, and mince the garlic.
  2. Heat olive oil in a pan, then add the eggplant and cook until softened.
  3. Stir in the tomatoes, garlic, cumin, paprika, salt, and pepper.
  4. Cook for 5 minutes, mashing the mixture with a fork until desired consistency is reached.
