Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the salmon fillets dry with paper towels, then season them with salt, pepper, and a drizzle of olive oil.
Baking
- Place the seasoned salmon on the prepared baking sheet and bake for 12-15 minutes, or until cooked through and flaky.
Avocado Mash
- While the salmon bakes, halve and pit the avocados, then scoop the flesh into a medium bowl.
- Mash the avocado with a fork and stir in the juice of one lime, chopped cilantro, and a pinch of salt and pepper.
Serving
- Serve the baked salmon immediately, topped with a generous spoonful of the fresh avocado mash.
Notes
For extra flavor, you can add a sprinkle of chili flakes to the avocado mash. Ensure salmon is cooked to an internal temperature of 145°F (63°C).
