Preparation
- Cook your preferred rice according to package directions, then set it aside to cool slightly.
- Prepare the shrimp by peeling and deveining them if necessary, then pat them dry with a paper towel.
- Dice the avocado and cucumber, and halve the cherry tomatoes, then set all the prepared vegetables aside.
Cooking & Assembly
- In a medium skillet, cook the shrimp over medium-high heat for 2-3 minutes per side, until pink and opaque.
- In a small bowl, whisk together the soy sauce, sesame oil, and lime juice, adding sriracha if you desire some heat.
- To assemble, place the cooked rice in a bowl and arrange the cooked shrimp and prepared vegetables on top.
- Drizzle the dressing over the bowl contents and serve immediately for the best taste and texture.
