Preparation
- Preheat your oven to 400°F (200°C) and prepare a 9-inch pie dish.
- In a large pot or Dutch oven, start by melting the butter over medium heat; then add the diced onion, carrots, and celery, cooking until softened, about 5-7 minutes.
Making the Filling
- Stir in the flour and cook for 1 minute, then gradually whisk in the chicken broth and milk until the mixture is smooth and thickened.
- Add the shredded chicken, frozen peas, salt, and pepper to the pot and stir to combine.
- Bring the mixture to a simmer and cook for 5 minutes, allowing it to thicken further, then remove it from the heat.
Assembling and Baking
- Pour the chicken mixture into the prepared pie dish, then place one pie crust over the filling, gently pressing it down.
- Cut a few slits in the top crust and bake for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
