  • 1 Whole turkey (12-15 pounds)
  • 1/2 cup Butter, softened
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 Onion, quartered
  • 2 Celery stalks, cut into 2-inch pieces
  • 3 Fresh rosemary sprigs
  • 2 cups Chicken broth

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and remove giblets and neck from the turkey. Pat the turkey dry with paper towels.
Seasoning
  1. Rub softened butter all over the turkey, then season generously with salt and pepper.
Stuffing and Roasting
  1. Place onion, celery, and rosemary inside the turkey cavity. Place the turkey in a large roasting pan.
  2. Pour chicken broth into the bottom of the roasting pan, then roast for 30 minutes.
  3. Reduce oven temperature to 325°F (160°C) and continue roasting for 3 to 3.5 hours, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
Resting
  1. Remove turkey from the oven, tent it with foil, and let it rest for 20-30 minutes before carving.

Notes

For extra crispy skin, baste the turkey every hour with the pan juices. If the turkey starts to brown too quickly, tent it loosely with aluminum foil.
