- In a medium bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, and sesame oil to create the sauce and set it aside.
- Heat olive oil in a large skillet or wok over medium-high heat. Add the ground chicken and cook, breaking it up with a spoon, until it is no longer pink.
- Drain any excess fat from the skillet. Add the minced ginger and garlic to the skillet and cook for 1 minute until fragrant.
- Pour the prepared sauce into the skillet with the chicken. Stir well to coat all the chicken.
- Stir in the minced water chestnuts and sliced green onions. Cook for another 2-3 minutes, allowing the sauce to thicken slightly.
- Remove from heat. Serve the chicken mixture warm with butter lettuce cups. Garnish with sesame seeds if desired.
Notes
For extra crunch, you can add some finely diced celery or carrots to the chicken mixture. You can also adjust the spice level by adding a dash of sriracha or red pepper flakes to the sauce.
