Cake Preparation
- Preheat your oven to 350°F (175°C) and grease and flour a 9-inch round cake pan.
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a large bowl, cream together the softened butter and eggs until light and fluffy.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, mixing until just combined after each addition.
- Stir in the lime zest, lime juice, and a few drops of green food coloring, if desired, until evenly distributed.
- Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
Lime Glaze Preparation
- While the cake cools, prepare the glaze by whisking powdered sugar and lime juice in a small bowl.
- Add milk, one tablespoon at a time, until the glaze reaches your desired consistency.
- Once the cake is completely cool, drizzle the lime glaze over the top, letting it drip down the sides.
Notes
For an extra tangy kick, add more lime zest to the batter. You can also garnish with fresh lime slices or mint leaves for a beautiful presentation. Make sure your butter and eggs are at room temperature for a smoother batter.
