Preparation
- In a saucepan, combine strawberries, sugar, and 2 cups of water. Bring to a simmer over medium heat and cook for 10-15 minutes, until the strawberries are softened and the sugar is dissolved.
- Remove from heat and let the mixture cool completely. Once cooled, strain the syrup through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible.
- Discard the solids. Add the remaining 2 cups of water to the strawberry syrup and stir well.
- To serve, fill glasses with ice and pour in the strawberry mixture. Top with sparkling water or club soda and stir gently. Garnish with fresh strawberries or mint, if desired.
Notes
For a bolder flavor, you can muddle some fresh mint with the strawberries before simmering. Adjust sugar to taste based on the sweetness of your strawberries. This syrup can be made ahead of time and stored in the refrigerator for up to a week.
