Preparation
- Preheat your oven to 400°F (200°C) and slice the chicken breasts horizontally to create thinner cutlets.
- In a small bowl, combine the softened cream cheese with garlic powder, onion powder, chili powder, salt, and black pepper.
- Spread the cream cheese mixture evenly over one side of each chicken cutlet, then top with sliced jalapeños and half of the shredded cheddar cheese.
Cooking
- Heat the olive oil in an oven-safe skillet over medium-high heat, then sear the chicken cutlets cream cheese side down for 2-3 minutes until golden brown.
- Flip the chicken, sprinkle with the remaining cheddar cheese, and transfer the skillet to the preheated oven.
- Bake for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and lightly browned.
Serving
- Carefully remove the skillet from the oven and let the cheesy jalapeño chicken rest for a few minutes before serving.
Notes
For extra heat, leave some seeds in the jalapeños. Serve with a side of rice or a fresh salad for a complete meal.
