Ingredients

Main
  • 4 boneless, skinless chicken breasts
  • 2 sliced jalapeños
  • 1 cup, shredded cheddar cheese
  • 4 ounces, softened cream cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp olive oil

Equipment

  • Oven-safe skillet
  • Small bowl

Method

Preparation
  1. Preheat your oven to 400°F (200°C) and slice the chicken breasts horizontally to create thinner cutlets.
  2. In a small bowl, combine the softened cream cheese with garlic powder, onion powder, chili powder, salt, and black pepper.
  3. Spread the cream cheese mixture evenly over one side of each chicken cutlet, then top with sliced jalapeños and half of the shredded cheddar cheese.
Cooking
  1. Heat the olive oil in an oven-safe skillet over medium-high heat, then sear the chicken cutlets cream cheese side down for 2-3 minutes until golden brown.
  2. Flip the chicken, sprinkle with the remaining cheddar cheese, and transfer the skillet to the preheated oven.
  3. Bake for 15-20 minutes, or until the chicken is cooked through and the cheese is bubbly and lightly browned.
Serving
  1. Carefully remove the skillet from the oven and let the cheesy jalapeño chicken rest for a few minutes before serving.

Notes

For extra heat, leave some seeds in the jalapeños. Serve with a side of rice or a fresh salad for a complete meal.
