Preparation
- Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large bowl, combine the ricotta cheese, almond flour, sugar, egg, vanilla extract, baking powder, and salt. Mix until just combined, being careful not to overmix.
- Drop spoonfuls of the mixture onto the prepared baking sheet, leaving some space between each pillow.
- Bake for 20-25 minutes, or until the ricotta almond pillows are golden brown and set.
Notes
For extra flavor, you can add a pinch of cinnamon or lemon zest to the batter. These pillows are best served warm, perhaps with a dusting of powdered sugar or a dollop of fresh cream.
