Preparation
  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the ricotta cheese, almond flour, sugar, egg, vanilla extract, baking powder, and salt. Mix until just combined, being careful not to overmix.
  3. Drop spoonfuls of the mixture onto the prepared baking sheet, leaving some space between each pillow.
  4. Bake for 20-25 minutes, or until the ricotta almond pillows are golden brown and set.
