Ingredients
  

Cake Base
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
Crumble Topping
  • 1 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup cold unsalted butter, cubed
Flavorings
  • 1 tablespoon lemon zest for lemon poppy seed
  • 1 tablespoon poppy seeds for lemon poppy seed
  • 2 tablespoons cocoa powder for chocolate marble

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and grease an 8x8 inch baking pan. In a medium bowl, whisk together the flour, granulated sugar, baking powder, and salt for the cake base.
  2. In a separate bowl, cream together the softened butter and eggs, then gradually add the milk and vanilla extract.
  3. Combine the wet and dry ingredients, mixing until just combined; do not overmix. For the crumble topping, mix flour, brown sugar, and cinnamon, then cut in cold butter until crumbly.
Assembly & Baking
  1. Pour half of the cake batter into the prepared pan. If making multiple flavors, divide the batter and mix in your chosen flavorings now.
  2. Sprinkle half of the crumble topping over the batter. Carefully spread the remaining cake batter over the crumble, then top with the remaining crumble mixture.
  3. Bake for 35-45 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cake cool in the pan on a wire rack.

Notes

To create 5 flavors, divide the cake batter into 5 portions. Mix in different flavorings to each portion before layering. Suggested flavor combinations include: lemon poppy seed (lemon zest, poppy seeds), chocolate marble (cocoa powder), almond (almond extract, sliced almonds), cinnamon swirl (extra cinnamon, brown sugar), and plain vanilla.
