  • 2.25 teaspoons active dry yeast

  • 3.5 cups all-purpose flour

  • 2 tablespoons unsalted butter, melted
Baking Soda Bath
  • 10 cups water
  • 0.5 cup baking soda

Method
 

Dough Preparation
  1. In a large bowl, dissolve yeast and sugar in warm water, then let sit for 5 minutes until foamy.
  2. Add flour, salt, and melted butter to the yeast mixture and mix until a shaggy dough forms.
  3. Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
Forming and Baking
  1. Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
  2. Bring 10 cups of water and baking soda to a rolling boil in a large pot.
  3. Divide the risen dough into 8 equal pieces; roll each into a 12-inch rope and cut into 1-inch pieces.
  4. Boil pretzel bites in batches for 20-30 seconds, then remove with a slotted spoon and place on prepared baking sheets.
  5. Whisk an egg, brush it over the pretzel bites, and sprinkle with coarse sea salt.
  6. Bake for 12-15 minutes, or until golden brown, then let them cool slightly on a wire rack.

Notes

For an extra golden-brown crust, ensure the baking soda bath is at a rolling boil. Serve with your favorite dipping sauces like cheese sauce or mustard.
