Dough Preparation
- In a large bowl, dissolve yeast and sugar in warm water, then let sit for 5 minutes until foamy.
- Add flour, salt, and melted butter to the yeast mixture and mix until a shaggy dough forms.
- Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.
Forming and Baking
- Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper.
- Bring 10 cups of water and baking soda to a rolling boil in a large pot.
- Divide the risen dough into 8 equal pieces; roll each into a 12-inch rope and cut into 1-inch pieces.
- Boil pretzel bites in batches for 20-30 seconds, then remove with a slotted spoon and place on prepared baking sheets.
- Whisk an egg, brush it over the pretzel bites, and sprinkle with coarse sea salt.
- Bake for 12-15 minutes, or until golden brown, then let them cool slightly on a wire rack.
Notes
