Preparation

Cooking the Soup
- Stir in vegetable broth, rinsed cannellini beans, diced tomatoes, oregano, basil, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, allowing the flavors to meld.
- Add spinach and cook for an additional 2-3 minutes, or until the spinach wilts.
Serving
- Ladle the Tuscan White Bean Soup into bowls and serve hot.
- Optionally, garnish with fresh parsley or a drizzle of olive oil.
Notes
For extra flavor, you can add a bay leaf during simmering and remove it before serving. This soup also freezes well, making it great for meal prep.
