  • 3 medium Tomatoes chopped
  • 1 large Cucumber peeled and sliced
  • 1/2 medium Red Onion thinly sliced
  • 1 large Green Bell Pepper seeded and sliced
  • 1/2 cup Kalamata Olives pitted
  • 4 oz Feta Cheese block, crumbled or cubed
  • 1/4 cup Olive Oil extra virgin
  • 2 tbsp Red Wine Vinegar
  • 1 tsp Dried Oregano
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste

Method
 

Preparation
  1. Chop the tomatoes, slice the cucumber, thinly slice the red onion, and slice the bell pepper.
  2. In a large bowl, combine the chopped tomatoes, sliced cucumber, red onion, bell pepper, and Kalamata olives.
  3. Crumble or cube the feta cheese and add it to the bowl with the vegetables.
  4. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and black pepper.
  5. Pour the dressing over the salad ingredients and toss gently to combine; serve immediately.
