  • 4 oz Ground beef 80/20 lean to fat ratio
  • Pinch Salt
  • Pinch Black pepper
Burger Assembly
  • 1 Sesame seed bun
  • 1 American cheese slice
  • 1/4 cup Lettuce shredded
  • 2 tbsp Onion minced
  • 4-5 Pickle slices
Special Sauce
  • 2 tbsp Mayonnaise
  • 1 tbsp Ketchup
  • 1 tsp Sweet pickle relish
  • 1/2 tsp White vinegar
  • 1/4 tsp Onion powder
  • 1/4 tsp Garlic powder
  • 1/4 tsp Paprika

Method
 

Burger Preparation
  1. Divide the ground beef into two equal balls and season generously with salt and pepper.
  2. Heat a griddle or cast-iron skillet over high heat until smoking, then add the beef balls and smash each with a spatula until thin and crispy.
  3. Cook for 2-3 minutes per side, placing a cheese slice on one patty during the last minute of cooking.
Special Sauce
  1. Combine all special sauce ingredients in a small bowl and mix well.
Assembly
  1. Toast the sesame seed bun halves, then spread a generous amount of special sauce on the bottom bun.
  2. Layer shredded lettuce, minced onion, pickle slices, the plain patty, and then the cheese-covered patty.
  3. Top with more special sauce on the top bun and complete the burger assembly.

Notes

For an extra crispy patty, ensure your griddle is very hot before smashing the beef. Adjust sauce ingredients to your taste preference.
