Preparation
- Preheat your oven to 400°F (200°C) and lightly grease an 8x8 inch baking pan. In a large bowl, whisk together the cornmeal, flour, sugar, and baking powder.
Mixing
- In a separate bowl, whisk together the egg, milk, and vegetable oil. Pour the wet ingredients into the dry ingredients and stir until just combined; be careful not to overmix, as this can lead to tough cornbread.
Baking
- Pour the batter into the prepared baking pan and bake for 20-25 minutes, or until a wooden skewer inserted into the center comes out clean. Let the cornbread cool slightly before slicing and serving.
Notes
For extra flavor, consider adding a handful of shredded cheddar cheese or a few chopped jalapeños to the batter before baking. Serve warm with butter and honey, or as a side to chili or barbecue.
