Dressing
  • 0.25 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Preparation
  1. Cook the pasta according to package directions until al dente, then drain and rinse with cold water to cool completely.

  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and black pepper for the dressing.
Assembly
  1. Pour the dressing over the pasta and vegetable mixture, tossing gently to ensure everything is evenly coated.
  2. If using, gently fold in the crumbled feta cheese.
  3. Cover the bowl and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
