Prepare the Taco Meat
- Cook the ground turkey or beef in a skillet over medium heat, breaking it apart until fully browned.
- Drain any excess fat, then stir in the taco seasoning and 1/4 cup water, simmering until the liquid reduces.
Assemble the Bowls
- In a large mixing bowl, combine the shredded romaine lettuce, black beans, corn, cherry tomatoes, diced red onion, and diced avocado.
- Add the cooked taco meat mixture to the vegetable base and gently toss everything together.
Make the Dressing
- Whisk together Greek yogurt, lime juice, chopped cilantro, cumin, garlic powder, and salt in a small bowl.
- Add 1-2 tablespoons of water if a thinner consistency is desired for the dressing.
Serve
- Divide the taco bowl mixture evenly among four serving bowls.
- Drizzle each serving generously with the homemade cilantro-lime Greek yogurt dressing.
Notes
For an extra kick, add a pinch of red pepper flakes to the taco meat. You can also customize your bowl with other low-calorie toppings like salsa or pickled jalapeƱos. This recipe is excellent for meal prep; store dressing separately and add just before serving.
