Method

Prepare the Taco Meat
  1. Cook the ground turkey or beef in a skillet over medium heat, breaking it apart until fully browned.
  2. Drain any excess fat, then stir in the taco seasoning and 1/4 cup water, simmering until the liquid reduces.
Assemble the Bowls
  1. In a large mixing bowl, combine the shredded romaine lettuce, black beans, corn, cherry tomatoes, diced red onion, and diced avocado.
  2. Add the cooked taco meat mixture to the vegetable base and gently toss everything together.
Make the Dressing
  1. Whisk together Greek yogurt, lime juice, chopped cilantro, cumin, garlic powder, and salt in a small bowl.
  2. Add 1-2 tablespoons of water if a thinner consistency is desired for the dressing.
Serve
  1. Divide the taco bowl mixture evenly among four serving bowls.
  2. Drizzle each serving generously with the homemade cilantro-lime Greek yogurt dressing.

Notes

For an extra kick, add a pinch of red pepper flakes to the taco meat. You can also customize your bowl with other low-calorie toppings like salsa or pickled jalapeƱos. This recipe is excellent for meal prep; store dressing separately and add just before serving.
