Prepare the Chicken
- Cut chicken breasts into 12 equally sized pieces and marinate in buttermilk for at least 30 minutes, or overnight.
- Whisk together flour, cornstarch, paprika, garlic powder, salt, and pepper in a shallow dish, then dredge the marinated chicken pieces in the mixture, ensuring they are fully coated.
- Heat vegetable oil in a large pot or Dutch oven to 350°F (175°C) and fry chicken pieces in batches until golden brown and cooked through, about 3-5 minutes per side.
- Remove chicken from oil and place on a wire rack to drain excess oil.
Make the Bang Bang Sauce
- Combine mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice in a small bowl and whisk until smooth.
Assemble the Sliders
- Lightly toast slider buns.
- Place a piece of crispy chicken on the bottom half of each bun, generously drizzle with Bang Bang sauce, and top with a lettuce leaf and sliced green onions.
Notes
For extra crunch, add a slice of pickle to each slider. You can prepare the chicken and sauce ahead of time and assemble before serving. Adjust the amount of Sriracha to your preferred spice level.
