Ingredients
  

For the Chicken
  • 1 lb chicken breasts boneless, skinless
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 8 cups vegetable oil for frying
For the Bang Bang Sauce
  • 0.5 cup mayonnaise
  • 0.25 cup sweet chili sauce
  • 1 tbsp Sriracha or to taste
  • 1 tbsp honey
  • 1 tbsp lime juice
For Assembly
  • 12 slider buns
  • 12 lettuce leaves
  • 2 green onions thinly sliced

Method
 

Prepare the Chicken
  1. Cut chicken breasts into 12 equally sized pieces and marinate in buttermilk for at least 30 minutes, or overnight.
  2. Whisk together flour, cornstarch, paprika, garlic powder, salt, and pepper in a shallow dish, then dredge the marinated chicken pieces in the mixture, ensuring they are fully coated.
  3. Heat vegetable oil in a large pot or Dutch oven to 350°F (175°C) and fry chicken pieces in batches until golden brown and cooked through, about 3-5 minutes per side.
  4. Remove chicken from oil and place on a wire rack to drain excess oil.
Make the Bang Bang Sauce
  1. Combine mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice in a small bowl and whisk until smooth.
Assemble the Sliders
  1. Lightly toast slider buns.
  2. Place a piece of crispy chicken on the bottom half of each bun, generously drizzle with Bang Bang sauce, and top with a lettuce leaf and sliced green onions.

Notes

For extra crunch, add a slice of pickle to each slider. You can prepare the chicken and sauce ahead of time and assemble before serving. Adjust the amount of Sriracha to your preferred spice level.
