  • 2 cans diced tomatoes (28 ounce)
  • 1 tablespoon olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • salt to taste
  • pepper to taste
Grilled Cheese
  • 8 slices bread
  • 4 slices cheddar cheese
  • 4 slices provolone cheese
  • 4 tablespoons butter softened

Method
 

Tomato Soup
  1. Sauté chopped onion in olive oil until softened, then add minced garlic and cook until fragrant.
  2. Add diced tomatoes and vegetable broth to the pot, bring to a simmer, then cook for 15 minutes to allow flavors to meld.
  3. Carefully blend the soup until smooth, return it to the pot, then stir in heavy cream and season with salt and pepper to taste.
Grilled Cheese
  1. Butter one side of each bread slice, then assemble sandwiches with cheddar and provolone cheese between the unbuttered sides of bread.
