Tomato Soup
- Sauté chopped onion in olive oil until softened, then add minced garlic and cook until fragrant.
- Add diced tomatoes and vegetable broth to the pot, bring to a simmer, then cook for 15 minutes to allow flavors to meld.
- Carefully blend the soup until smooth, return it to the pot, then stir in heavy cream and season with salt and pepper to taste.
Grilled Cheese
- Butter one side of each bread slice, then assemble sandwiches with cheddar and provolone cheese between the unbuttered sides of bread.
- Grill the sandwiches in a skillet over medium heat for 3-4 minutes per side, until golden brown and the cheese is melted.
Notes
For a richer flavor, you can roast the tomatoes before adding them to the soup. Experiment with different types of cheese for your grilled cheese to find your favorite combination!
