Best way to grow your Waffles (Belgian Style)

These Belgian-style waffles are incredibly fluffy and light, with a crispy exterior. The secret to their "growth" is a combination of yeast and whipped egg whites, making them a perfect indulgent breakfast or brunch.

Ingredients
  

Waffle Batter
  • 2 cups all-purpose flour
  • 2.25 teaspoons active dry yeast
  • 2 tablespoons granulated sugar
  • 0.5 teaspoon salt
  • 1.5 cups milk, warm
  • 0.05 cup unsalted butter, melted
  • 2 large eggs, separated
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a large bowl, combine flour, yeast, sugar, and salt, then set aside.
  2. In a separate bowl, whisk together the warm milk, melted butter, and egg yolks.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined, then cover and let rise in a warm place for 30-60 minutes.
  4. In a clean bowl, beat the egg whites until stiff peaks form.
Cooking
  1. Gently fold the whipped egg whites into the waffle batter until fully incorporated.
  2. Preheat your Belgian waffle iron and lightly grease it.
  3. Pour about 1/2 cup of batter per waffle onto the hot iron and cook according to manufacturer’s instructions until golden brown and crispy.
  4. Serve immediately with your favorite toppings.

Notes

For extra flavor, add a pinch of cinnamon or nutmeg to the dry ingredients. Ensure your milk is warm (not hot) to activate the yeast without killing it. For perfect crispy waffles, do not open the waffle iron too early while cooking.
