Preparation
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius) and gently place one pie crust into a 9-inch pie plate.
Making the Filling
- In a large bowl, combine the blueberries, sugar, flour, lemon juice, and cinnamon, mixing everything gently.
Assembling the Pie
- Pour the blueberry mixture into the pie crust and top with the second pie crust, crimping the edges to seal.
- Cut a few slits into the top crust for steam to escape and brush the top with the beaten egg.
Baking the Pie
- Bake for 15 minutes at 400 degrees Fahrenheit, then reduce the oven temperature to 375 degrees Fahrenheit (190 degrees Celsius) and continue baking for another 30-35 minutes.
- The pie is ready when the crust is golden brown and the filling is bubbly. Let it cool completely before serving.
