  • 600 g Cod fillets about 1.5 lbs, 4 pieces
  • 60 g Butter 4 tbsp, melted
  • 60 g Panko breadcrumbs 1 cup
  • 15 g Fresh parsley 2 tbsp, chopped
  • 1 Lemon juiced and zested
  • 5 g Garlic powder 1 tsp
  • 5 g Paprika 1 tsp
  • 5 g Salt 1 tsp
  • 2 g Black pepper 0.5 tsp

Method
 

Preparation
  1. Preheat your oven to 200°C (400°F) and lightly grease a baking dish.
  2. In a small bowl, combine melted butter, panko breadcrumbs, chopped parsley, lemon zest, garlic powder, paprika, salt, and pepper until well mixed.
  3. Place the cod fillets in the prepared baking dish and squeeze fresh lemon juice over each fillet.
Baking
  1. Evenly sprinkle the breadcrumb mixture over the top of each cod fillet.
  2. Bake for 15-20 minutes, or until the cod is opaque, flakes easily with a fork, and the breadcrumbs are golden brown.
  3. Serve immediately with your favorite side dishes.

Notes

For extra flavor, consider adding a pinch of cayenne pepper to the breadcrumb mixture. This dish pairs wonderfully with roasted vegetables or a fresh green salad.
