Preparation
- Preheat your oven to 200°C (400°F) and lightly grease a baking dish.
- In a small bowl, combine melted butter, panko breadcrumbs, chopped parsley, lemon zest, garlic powder, paprika, salt, and pepper until well mixed.
- Place the cod fillets in the prepared baking dish and squeeze fresh lemon juice over each fillet.
Baking
- Evenly sprinkle the breadcrumb mixture over the top of each cod fillet.
- Bake for 15-20 minutes, or until the cod is opaque, flakes easily with a fork, and the breadcrumbs are golden brown.
- Serve immediately with your favorite side dishes.
Notes
For extra flavor, consider adding a pinch of cayenne pepper to the breadcrumb mixture. This dish pairs wonderfully with roasted vegetables or a fresh green salad.
