Cooking Instructions
- Cook linguine according to package directions until al dente, then drain and set aside, reserving 1/2 cup of pasta water.
- While the pasta cooks, melt 1 tablespoon of butter in a large skillet over medium-high heat, and sear the shrimp for 1-2 minutes per side until pink; remove the shrimp and set aside.
- Reduce heat to medium, add the remaining butter and garlic to the skillet, and cook until fragrant, about 30 seconds.
- Stir in the heavy cream, Parmesan cheese, Cajun seasoning, and diced tomatoes; bring to a gentle simmer for 3-5 minutes, allowing the sauce to thicken.
- Return the cooked shrimp to the skillet, add the drained linguine, and toss to combine; if the sauce is too thick, add a splash of the reserved pasta water.
- Season with salt and pepper to taste, then serve immediately, garnished with fresh parsley and red pepper flakes if desired.
Notes
For extra heat, add more Cajun seasoning or a pinch of cayenne pepper. You can also add sliced bell peppers or onions for more vegetables and flavor.
