  • 1.5 lbs chicken thighs
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 bell peppers sliced
  • 3 garlic cloves minced
  • 28 oz crushed tomatoes
  • 0.5 cup chicken broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

Preparation
  1. Season chicken with salt and pepper then brown it in olive oil in a large skillet for 5-7 minutes per side, until golden; remove chicken and set aside.
  2. Sauté chopped onion and sliced bell peppers in the same skillet for 5-7 minutes until soft, then add minced garlic and cook for another minute until fragrant.
Cooking
  1. Stir in crushed tomatoes, chicken broth, dried oregano, dried basil, salt, and black pepper; bring to a simmer.
  2. Return chicken to the skillet, reduce heat, cover, and simmer for 20-25 minutes, or until chicken is cooked through and tender.
Serving
  1. Serve hot, garnished with fresh parsley if desired, alongside pasta, rice, or crusty bread.

Notes

For extra flavor, you can add a splash of red wine with the tomatoes. Feel free to adjust the spice level by adding red pepper flakes. This dish reheats well and is great for meal prep.
