  • 4 oz Grilled chicken, steak, or sofritas
  • 0.25 cup Pico de gallo
  • 0.25 cup Corn salsa
  • 0.25 cup Guacamole
  • 2 tbsp Sour cream or Greek yogurt
  • 0.5 cup Shredded lettuce
  • 0.25 cup Shredded cheese
  • Lime wedges for serving
For the Vinaigrette (Optional)
  • 2 tbsp Red wine vinegar
  • 1 tsp Honey or agave nectar
  • 0.5 tsp Dried oregano
  • 0.25 tsp Cumin
  • 0.25 tsp Salt
  • 0.125 tsp Black pepper
  • 4 tbsp Olive oil

Method
 

Assemble the Bowl
  1. Start with a base of rice in a bowl.
  2. Add your chosen protein on top of the rice.
  3. Arrange black beans, pico de gallo, corn salsa, and guacamole around the protein.
  4. Dollop with sour cream or Greek yogurt.
  5. Sprinkle with shredded lettuce and cheese.

Make the Vinaigrette (Optional)
  1. Whisk together red wine vinegar, honey (or agave nectar), dried oregano, cumin, salt, and black pepper in a small bowl.
  2. Slowly drizzle in the olive oil while continuously whisking until the dressing is emulsified.
