  • 1 cup cornmeal
  • 1 cup all-purpose flour

  • 2 teaspoons baking powder

Wet Ingredients
  • 1 cup milk
  • 1 large egg
  • 1/4 cup unsalted butter, melted

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and grease an 8x8 inch baking pan or a 9-inch cast-iron skillet.
  2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the milk, egg, and melted butter.
Baking
  1. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  2. Pour the batter into the prepared baking pan and bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Notes

For extra flavor, you can add 1/2 cup of shredded cheddar cheese or a few tablespoons of chopped jalapeños to the batter.
