- Melt butter in a large pot, then sauté chopped onion and minced garlic until softened.
- Add diced potato and vegetable broth to the pot, then bring to a boil and cook until potatoes are tender.
- Stir in the salmon pieces and cook for 3-5 minutes, until cooked through.
- Reduce heat to low, then pour in heavy cream and fresh dill.
- Season with salt and pepper, then gently simmer for a few minutes until heated through. Do not boil after adding cream.
Notes
For extra flavor, add a squeeze of lemon juice at the end. You can also add other vegetables like carrots or celery to the soup.
