  • 1 lb salmon fillet skinless, cut into 1-inch pieces
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1/4 cup fresh dill chopped
  • 2 tbsp butter
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 potato diced
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Instructions
  1. Melt butter in a large pot, then sauté chopped onion and minced garlic until softened.
  2. Add diced potato and vegetable broth to the pot, then bring to a boil and cook until potatoes are tender.
  3. Stir in the salmon pieces and cook for 3-5 minutes, until cooked through.
  4. Reduce heat to low, then pour in heavy cream and fresh dill.
  5. Season with salt and pepper, then gently simmer for a few minutes until heated through. Do not boil after adding cream.

Notes

For extra flavor, add a squeeze of lemon juice at the end. You can also add other vegetables like carrots or celery to the soup.
