Method
 

Cookie Preparation
  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.

  4. Beat in egg and vanilla extract until well combined.

Filling Preparation
  1. Beat cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Whip heavy cream in a separate bowl until stiff peaks form, then gently fold into the cream cheese mixture.
Assembly
  1. Create a small indentation in the center of each cooled cookie.
  2. Fill the indentations with the cream cheese filling.
  3. Combine granulated sugar, turbinado sugar, and vanilla extract for the topping. Sprinkle this mixture generously over the filling.
  4. Use a kitchen torch to caramelize the sugar topping until golden and bubbly, allowing it to cool and harden before serving.

Notes

For an extra touch of flavor, you can add a pinch of cinnamon to the cookie dough. Ensure the cookies are completely cooled before filling to prevent the filling from melting. If you don't have a kitchen torch, you can place the cookies under a hot broiler for a very short time, watching carefully to prevent burning the sugar.
