Cookie Preparation
- Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt in a medium bowl.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg and vanilla extract until well combined.
- Gradually add dry ingredients to wet ingredients, mixing until just combined.
- Drop rounded spoonfuls of dough onto prepared baking sheets and bake for 10-12 minutes, or until edges are golden brown. Let cool completely.
Filling Preparation
- Beat cream cheese, powdered sugar, and vanilla extract until smooth.
- Whip heavy cream in a separate bowl until stiff peaks form, then gently fold into the cream cheese mixture.
Assembly
- Create a small indentation in the center of each cooled cookie.
- Fill the indentations with the cream cheese filling.
- Combine granulated sugar, turbinado sugar, and vanilla extract for the topping. Sprinkle this mixture generously over the filling.
- Use a kitchen torch to caramelize the sugar topping until golden and bubbly, allowing it to cool and harden before serving.
Notes
For an extra touch of flavor, you can add a pinch of cinnamon to the cookie dough. Ensure the cookies are completely cooled before filling to prevent the filling from melting. If you don't have a kitchen torch, you can place the cookies under a hot broiler for a very short time, watching carefully to prevent burning the sugar.
