Preparation
  1. Preheat your oven to 400°F (200°C) and cut the potatoes into wedges or 1-inch cubes.
  2. In a large bowl, whisk together the lemon juice, olive oil, oregano, garlic powder, salt, and pepper.
  3. Add the cut potatoes to the bowl and toss them well to ensure they are evenly coated with the mixture.
Cooking
  1. Spread the seasoned potatoes in a single layer on a baking sheet, making sure not to overcrowd them.
  2. Roast for 30 minutes, then flip the potatoes and continue roasting for another 25-30 minutes, or until they are golden brown and crispy.
