Crockpot Chicken and Rice in 30 Minutes

Main Ingredients
  • 1.5 lbs chicken breast boneless, skinless, cut into 1-inch pieces
  • 1.5 cups long-grain white rice uncooked
  • 3 cups chicken broth
  • 10.75 oz cream of chicken soup undiluted
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Optional Garnishes
  • bunch fresh parsley chopped
  • 0.5 cup shredded cheddar cheese

Method
 

Preparation
  1. Spray the slow cooker insert with non-stick spray to prevent sticking and make cleanup easier.
  2. Combine all ingredients except garnishes in the slow cooker: chicken pieces, rice, chicken broth, cream of chicken soup, onion powder, garlic powder, salt, and pepper.
Cooking
  1. Cover the slow cooker and cook on high for 2 hours, or until the chicken is cooked through and the rice is tender.
  2. For faster cooking, cook on high for 30 minutes, then switch to low for 1-2 hours.
Serving
  1. Stir well before serving, as the rice can settle at the bottom. Garnish with fresh parsley and shredded cheddar cheese, if desired.

Notes

For extra flavor, consider sautéing the chicken and onions before adding them to the slow cooker. You can also customize the spices to your liking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
