Prepare Cucumber Salad
- In a medium bowl, combine the diced cucumber, mayonnaise, sour cream, chopped fresh dill, and minced red onion.
- Season the mixture with salt and black pepper; stir well to ensure all ingredients are evenly distributed and the flavors are balanced.
Assemble Sandwiches
- Take each slice of bread and spread a generous amount of the prepared cucumber salad onto one side.
- Top with a second slice of bread to form a sandwich, then gently press down to secure the filling.
- Using a sharp knife, carefully slice each sandwich in half, either diagonally or straight across, to create two triangular or rectangular portions.
Serve
- Arrange the cucumber salad sandwiches on a platter and, if desired, garnish each with a fresh dill sprig.
- Serve immediately for the best taste and texture, or cover and chill for up to an hour before serving for a refreshing snack or light meal.
Notes
For extra flavor, you can toast the bread lightly before assembling the sandwiches. These sandwiches are best served fresh, but can be prepared a short time in advance and kept chilled.
