Preparation
- If using fresh or frozen corn, cook it until tender then drain any excess liquid.
- In a large bowl, combine the cooked corn, mayonnaise, sour cream, crumbled cotija cheese, and lime juice.
Add Seasoning
- Stir in the chili powder, smoked paprika, garlic powder, chopped cilantro, and diced jalapeño (if using).
- Season the dip with salt and black pepper to taste, then mix everything until well combined.
Serve
- Transfer the corn dip to a serving bowl.
- Garnish with extra cotija cheese, fresh cilantro, lime wedges, and a drizzle of hot sauce if desired.
Notes
For a smoky flavor, grill or roast fresh corn before adding it to the dip. This dip can be made ahead of time and refrigerated for a few hours. Adjust spice levels to your preference by adding more or less jalapeño and chili powder. Serve warm or cold with your favorite chips or as a side dish.
