Crust
- Preheat oven to 350°F (175°C) and grease a 9-inch springform pan.
- Combine graham cracker crumbs, sugar, and cinnamon in a bowl; stir in melted butter until fully mixed.
- Press the mixture evenly onto the bottom of the prepared springform pan.
Filling
- In a large bowl, beat softened cream cheese and sugar until smooth and creamy.
- Add pumpkin puree, eggs, vanilla extract, cinnamon, nutmeg, ginger, and salt, mixing until just combined.
- Pour the filling over the crust in the springform pan and spread evenly.
- Bake for 50-60 minutes, or until the edges are set and the center jiggles slightly.
- Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour.
- Remove from the oven, cool completely on a wire rack, then refrigerate for at least 4 hours or overnight before serving.
Notes
For best results, make sure your cream cheese is at room temperature to prevent lumps in the filling. A water bath can also be used for baking to prevent cracks, though it is optional. Garnish with whipped cream and a sprinkle of cinnamon, if desired.
