  • 0.75 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
For the topping
  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup cold unsalted butter cut into cubes
  • 0.5 cup milk

Equipment

  • 9x13 inch baking dish
  • large bowl
  • medium bowl
  • pastry blender (optional)

Method

Prepare the filling
  1. Preheat your oven to 375°F (190°C) and lightly butter a 9x13 inch baking dish.
  2. In a large bowl, combine the blackberries, sugar, flour, and lemon juice, then toss gently to coat the berries.
  3. Pour the blackberry mixture into the prepared baking dish and spread evenly.
Make the topping
  1. In a separate medium bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  3. Gradually add the milk and mix until just combined, forming a soft dough.
Assemble and bake
  1. Drop spoonfuls of the dough over the blackberry filling.
  2. Bake for 35-40 minutes until the topping is golden brown and the filling is bubbly.
  3. Let the cobbler cool slightly before serving; it's delicious on its own or with a scoop of vanilla ice cream!

Notes

For an extra touch, sprinkle a tablespoon of sugar over the topping before baking for a slightly crispier crust.
