Ingredients

Marinade
  • 4 large boneless, skinless chicken breasts
  • 0.5 cup lime juice
  • 0.25 cup orange juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Equipment

  • Grill
  • Mixing Bowl

Method

Preparation
  1. In a medium bowl, whisk together lime juice, orange juice, olive oil, minced garlic, chopped cilantro, chopped oregano, paprika, salt, and black pepper to create the marinade.
  2. Place the chicken breasts in a shallow dish or a resealable plastic bag, pour the marinade over the chicken, ensuring it's fully coated, then refrigerate for at least 30 minutes, or up to 4 hours for best flavor.
  3. Preheat your grill to medium-high heat (about 375-400°F/190-200°C) and lightly oil the grill grates to prevent sticking.
Cooking
  1. Remove the chicken from the marinade, discarding any excess marinade, and place the chicken breasts on the preheated grill.
  2. Grill for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through with nice grill marks.
Serving
  1. Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing or serving, allowing the juices to redistribute for a more tender result.

Notes

For extra flavor, you can add a pinch of cayenne pepper to the marinade for a subtle kick. Serve with your favorite side dishes like rice, salad, or grilled vegetables.
