Make the Marinade
- In a medium bowl, whisk together the lime juice, orange juice, pineapple juice, soy sauce, honey, minced garlic, grated ginger, and red pepper flakes.
Marinate the Chicken
- Place the chicken breasts in a shallow dish or a resealable plastic bag, pour the marinade over, and ensure chicken is fully coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
Prepare the Grill
- Preheat your grill to medium-high heat (375-400°F or 190-200°C) and lightly oil the grates to prevent sticking.
Grill the Chicken
- Remove chicken from marinade, discarding any remaining marinade. Grill the chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C).
Rest and Serve
- Transfer grilled chicken to a cutting board, tent with foil, and let rest for 5 minutes before slicing. Garnish with fresh cilantro and serve with lime wedges, if desired.
Notes
For extra flavor, consider adding a dash of rum or a pinch of smoked paprika to the marinade. This chicken pairs wonderfully with rice, a fresh salad, or grilled vegetables.
