Ingredients
  

For the Tropical Citrus Marinade
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1/4 cup pineapple juice
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • 1/2 teaspoon red pepper flakes
  • 4 boneless, skinless chicken breasts
For Grilling
  • 1 tablespoon Olive oil for grilling
For Garnish (Optional)
  • Fresh cilantro chopped
  • Lime wedges

Method
 

Make the Marinade
  1. In a medium bowl, whisk together the lime juice, orange juice, pineapple juice, soy sauce, honey, minced garlic, grated ginger, and red pepper flakes.
Marinate the Chicken
  1. Place the chicken breasts in a shallow dish or a resealable plastic bag, pour the marinade over, and ensure chicken is fully coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for deeper flavor.
Prepare the Grill
  1. Preheat your grill to medium-high heat (375-400°F or 190-200°C) and lightly oil the grates to prevent sticking.
Grill the Chicken
  1. Remove chicken from marinade, discarding any remaining marinade. Grill the chicken for 5-7 minutes per side, or until internal temperature reaches 165°F (74°C).
Rest and Serve
  1. Transfer grilled chicken to a cutting board, tent with foil, and let rest for 5 minutes before slicing. Garnish with fresh cilantro and serve with lime wedges, if desired.

Notes

For extra flavor, consider adding a dash of rum or a pinch of smoked paprika to the marinade. This chicken pairs wonderfully with rice, a fresh salad, or grilled vegetables.
