Preparation
- Rinse the red lentils thoroughly under cold water and set aside.
- Prepare the vegetables by dicing the carrots and celery, chopping the onion, and mincing the garlic.
Cooking
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced carrots, celery, and chopped onion, then sauté for 5-7 minutes until softened.
- Stir in the minced garlic, dried thyme, salt, and pepper, cooking for another minute until fragrant.
- Add the rinsed lentils, vegetable broth, canned diced tomatoes, and bay leaf to the pot. Bring the mixture to a boil.
- Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender.
- Remove the bay leaf before serving. Taste and adjust seasonings as needed.
Serving
- Ladle the hot lentil soup into bowls. Garnish with fresh herbs or a drizzle of olive oil if desired.
Notes
For extra flavor, you can add a squeeze of lemon juice or a dash of red wine vinegar just before serving. This soup also freezes well for future meals.
