Ingredients

Main Ingredients
  • 2 large russet potatoes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Toppings (Optional)
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup sour cream
  • 2 tablespoons chives, chopped

Equipment

  • oven
  • fork
  • paper towels

Method

Preparation
  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean under cold water and pat them completely dry with a paper towel. Prick each potato several times with a fork to allow steam to escape during baking.
Baking
  1. Rub the dried potatoes with olive oil, then sprinkle evenly with salt and pepper. Place the seasoned potatoes directly on the oven rack and bake for 50-70 minutes, or until the skin is crispy and the inside is tender when squeezed.
Serving
  1. Carefully remove the baked potatoes from the oven. Slice each potato lengthwise and fluff the inside with a fork. Top with shredded cheddar cheese, sour cream, chopped chives, and any other desired toppings, then serve immediately.

Notes

For extra crispy skin, you can lightly brush the potatoes with more olive oil halfway through baking. Experiment with other toppings like bacon bits, thinly sliced green onions, or a dollop of Greek yogurt for a healthier alternative to sour cream.
