Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the peeled and cut parsnips with maple syrup, olive oil, minced fresh thyme, salt, and black pepper until evenly coated.
Cooking
  1. Spread the seasoned parsnips in a single layer on the prepared baking sheet.
  2. Roast for 20-25 minutes, or until the parsnips are tender and lightly caramelized, flipping them halfway through.
  3. Serve immediately as a delicious side dish.

Notes

For extra crispiness, broil the parsnips for the last 2-3 minutes, watching carefully to prevent burning.
